Peaches are in season! They also happen to be one of my most favourite summer fruits and the only time of the year that I eat them. There's nothing better than a fresh sweet juicy peach in the summertime!
I purchase them in bulk, and sometimes I have more than I can eat. When that happens, in a dessert they go! We love to indulge in sweets during the summer because we can add so many fresh fruits to them.
These peach crumb bars are so delicious and easy to make. You can substitute for any sugar or flour that you have on hand, and you can even try out the recipe with strawberries or pears!
Ingredients
Peaches
2 cups peaches
2 tbsp lemon juice
1 tbsp coconut sugar
Crust & Crumb Topping
1 ½ cups rolled oats
1 ½ cups whole wheat flour
½ tsp baking powder
2 tsp cinnamon
¼ tsp sea salt
6 tbsp maple syrup
½ cup vegan butter
Directions
Preheat oven to 350°F. Place parchment paper in a 9x9 baking dish.
Wash your fresh peaches and slice, or dice them into desired thickness. I like to do ½ inch pieces.
Combine peaches, lemon juice and coconut sugar in a bowl. Stir together and place in a colander over a bowl, set aside.
In the bowl of a stand mixer, mix together oats, flour, baking powder, cinnamon, and salt. Add in maple syrup and butter, still until well combined.
Leaving enough dough for the crumb topping, press it into the bottom of your baking dish for the crust.
If peaches are sliced, layer them singly onto the crust. If they are diced, spoon the mixture evenly.
Crumble the left over dough on top of the peaches. Glaze the crumb mixture with the syrup that was left behind from draining the peaches. Sprinkle cinnamon on top.
Bake in oven for 30 minutes or until the top is golden brown.
